HUMMUS....A Middle East Dish We can prepare hummus with chickpeas. First we need tahini sauce for this. Follow my recipe below for both tahini n hummus. INGREDIENTS FOR TAHINI - 1. White sesame Seeds 2 tbsp 2. Curd 1/2 cup 3. Garlic clove 1 4. Lemon juice 1 tbsp 5. Olive oil 2 tbsp 6. Salt to taste PROCESS - 1. Heat a pan and dry roast sesame seeds in a low flame till you can feel nice aroma. 2. Further turn off the flame and cool sesame seeds completely. 3. Ina blender add roasted sesame seeds, garlic clove, lemon juice, olive oil and salt. 4. Blend till you get fine paste. You can add a tablespoon of water while blending if required. 5. Ina mixing bowl add curd and whisk till smooth. 6. Add paste of sesame seeds in it and mix well. 7. Tahini sauce is ready to use. INGREDIENTS FOR HUMMUS - 1. 2 cups soaked and boiled chickpeas 2. 1 cup tahini sauce 3. 1 cup olive oil 4. 3-4 garlic pods 5. Salt to taste 6. Lemon juice 7. Garnish 8. 1 tbsp extra virgin olive oil 9. Paprika PROCESS - - Blend together boiled and strained chickpeas, olive oil, garlic, salt and lemon juice - Place the hummus in a bowl,mix the tahini suace already prepared and pour some fine quality of olive oil and place it in refrigerator for an hour - Add chickpeas, chopped onions,garlic, cumin seeds, salt and grind it together. - Mix the mixture properly - Heat oil on a medium flame and shape the mixture.
