? Indian Style Macaroni ? For cooking Macaroni_ 200 gms Macaroni / or 2 Cups Macaroni Salt–1 tsp water–4 cup Other ingredients for making Macaroni recipe– 2 tbsp oil 2 Onions–finely chopped 4 Tomatoes–finely chopped 1 cup vegetables– Capsicum, carrot, beans 1/2 cup– green peas 2_3 green chilli 2 – 3 Garlic Pods_ finely Chopped 1 tsp Black Pepper ½ tsp Kashmiri Red Chilli Powder 1/2 tsp turmeric powder 1/2 garam masala powder 1 tsp Salt (or as per your choice) 1 tbsp red chili sauce 2 tbsp tomato sauce 1 tsp soya sauce 1 tsp chilli flakes 1 tsp mixed herbs 2 tbsp cheese 1 tbsp coriander leaves finely chopped Method– To begin making the Indian Style Masala Macaroni Recipe, get all the ingredients ready for cooking. Cut the vegetables and keep them ready. Cook the macaroni in boiling water, along with a little salt until al dente (firm yet cooked). Once done, drain the excess water and rinse the paste in cold water to prevent excess cooking. Toss the pasta in oil and keep aside. We do this, so the pasta does not stick to each and become lumpy. Heat oil in a wok or a kadai on medium heat. Add the garlic, onions, carrots, green chilli and capsicum. Then add green peas. Sprinkle some salt, cover the pan and saute on medium heat until the carrots are cooked through. Add all dry masalas and saute few minutes. Add the tomatoes n cooked few minutes.Then add red chili sauce, tomato sauce, soya sauce, salt and saute few seconds. Then add the cooked macaroni, toss on high heat until the macaroni pasta gets well coated with the masala. Add chilli flakes, mix herbs and cheese, mix well. Check the salt and spices and adjust to taste. Once done, stir in the chopped coriander leaves and turn off the heat. ?? Stuffed Moong Dal Cheela ?? Ingredients– For the Batter Moong Daal/Yellow split gram–1 cup Ginger–1 inch Green chillie– 1_2 Salt to taste For stuffing– Paneer – 100 gms ( grated) Capsicum- 1/ 2 cup (finely chopped) optional Onion–1/ 2 cup ( finely chopped) Coriander leaves- 3 to 4 tbsp ( finely chopped) Green chili- 1–2 ( finely chopped) Chat masala powder–1/2 tsp Black pepper powder–1/4 tsp salt to taste Oil– as required Method– Wash & rinse split moong daal and soak with enough water covering them at least 2 hours. After 2 hours discard the excess water. Grind the soaked daal, green chili and ginger to thick smooth paste. Add a very little water as required. To the paste add salt n some finely chopped coriander n whisk everything very well. Add water is required. The batter has to be not too thick not too thin it should be of medium consistency. Allow the mixture to rest for 15-20 mins. Prepare the Stuffing– In a mixing bowl add grated paneer, chopped capsicum, onion, green chillies, Coriander and mix well. Add black pepper powder, chaat masala and salt to taste.( Add this seasoning while making chilla). To make Chillas– Heat a nonstick pan on a medium low heat. Once hot, pour a scoop of batter in center and with help of spatula spread it into a round shape. You can make your chillas thick or thin. Thin chillas are crispier than thick ones. Pour some oil towards the edges and on the top as well and fry until crisp and golden brown. Flip upside down and cook for few seconds and flip it again. If you want you can make chillas oil free or with very less oil. Taste equally good. Place grated paneer mixture in the center. Then fold half or fold both side roll like shape.
