? Bathua Paratha ? Ingredients: Atta (Weat flour) - 2 Cup Bathua–1 cup finely chopped Onion–1 finely chopped Coriander leaves_ finely chopped Green chillies_2 finely chopped Ajwain (Carom seeds) - 1 tsp Red chili powder - 1/2 tsp Kasuri methi (dried fenugreek leaves)–1 tsp Oil–1 tbsp Salt to taste Water for kneading Oil for cooking Flour for dusting Directions: In a bowl, mix all above ingredients except for water n oil for cooking. Mix till all ingredients come together. vegetables water released due to the salt will be enough to slightly wet the ingredients and bring them together. Now adding little water a time, start kneading the mixture, Knead well for 2-3 mins. Cover and keep aside for 5 mins. Heat a pan, make small sections/ rounds of the dough. Place a small section on flat surface and roll out into a think round paratha. Use plain flour for dusting. When evenly rolled out, drizzle a little oil on the tawa/pan and place the paratha on top. Cook the paratha on both sides for 1 min each or till golden brown and cooked. Remove from heat and continue the same process with the remaining sections. Serve this hot paratha with any aachar n curd. ? Chatpata Tikka Bites ? This is a spicy, flavourful and crispy snack that will go perfectly with your evening tea. A crispy snack that melt in the mouth are these pan fried chatpata tikka bites made with rava, potato, and some spices. They are easy and quick to make and serve as a nice party snack or a finger food. INGREDIENTS Water – 3 cups Semolina – 2 cups Finely chopped onion – 1 Boiled and grated potatoes -2 cup Salt as per taste Red chilli flakes – 2 tsp Finely chopped coriander Rice flour – 2 tbsp Pav bhaji masala – 2 tsp Method– To make sooji tikka bites ake a pan add water and boil water. Add sooji into water, after a boil, mix well without lumps. Add Finely chopped onion, Boiled and grated potatoes and mix well. Add Salt as per taste, Red chilli flakes, finely chopped coriander and mix well. Turn off flame & let it cool little. Add rice flour, Pav bhaji masala and mix well. Take a tray. Add oil & grease tray with oil. Transfer tikka mix and spread. Set in fridge for 1 hour or cover with silver foil or clig wrap and set for 30 mins. After 1 hour remove from fridge cut into pieces. In a pan add 2 tbsp oil and let it heat. Shallow fry tikka’s. Flip and fry until golden crisp. ? Dhokla ? Ingredients– for batter: 1 cup– besan 2 tbsp– suji/ semolina 1½ tablespoons Chilli-ginger-garlic paste( garlic paste optional) 1 tsp Eno Fruit Salt (or 1/2 tsp Baking Soda) ¼ tsp– turmeric powder 1/2 cup curd 1 tsp sugar 2 tsp oil ¼ tsp salt ½ cup water For tadka– 3 tsp oil 1 tsp mustard ½ tsp cumin seeds few curry leaves 3 green chilli slit 2 tbsp water ¼ tsp salt 2 tbsp coconut grated 1 tbsp coriander chopped Instructions Firstly, in a large mixing bowl take 1 cup besan, 2 tbsp rava and ¼ tsp turmeric, add curd. Also add ½ tsp chilli ginger garlic paste, 1 tsp sugar, 2 tsp oil and ¼ tsp salt. Add ½ cup water and make a smooth lump free batter. Allow to rest for 10 minutes later add a tsp of eno fruit salt to batter. Mix gently till the batter turns frothy and light. transfer the dhokla batter immediately to greased tray and fill them until half its capacity. Steam it for 10-15 minutes over medium flame. After 10-15 minutes, insert a knife in the center and check if it comes out clean. If it does, then it is ready otherwise steam it more. Let it cool for few minutes and cut the dhokla into square pieces or shape of your choice. Heat 2 tablespoons oil in a small tempering pan. Add mustard seeds and cumin seeds. When they begin to crackle, add green chillies and curry leaves. Sauté for 30 seconds. Add salt and water and let the salt dissolve. pour the tempering immediately over the dhokla making sure it absorbs completely. Further sprinkle 2 tbsp coconut and 1 tbsp coriander. ? Rusk Biscuits Ka Halwa ? Want to impress your guests with a very unique sweet and show off your culinary skills? Try this Rusk Halwa. Delicious Rusk Biscuits halwa which can be made in few minutes. This halwa not only taste amazing but is super easy to make. Ingredients: Rusk Biscuits–6_8 Egg_ 2 Milk– 1 cup Sugar–1/2 cup Ghee–¼ cup Raisins–8_9 Cardamom powder–1/4 tsp Pinch of orange food colour Some chopped nuts for garnishing Method– Powder the Rusk Biscuits into a fine powder using rolling pin or the dry mixie jar. Take heavy bottom pan, add rusk biscuits powder, egg, milk, ghee, sugar, food colour and mix well using spatula. Now put on the flame on high. stir continuously. After 1_2 minutes keep the flame simmer. Stir occasionally till the mixture becomes thick; then add the Cardamom powder and raisins or chopped nuts. Mix them well. Cook till the mixture does not stick on the walls of the pan. Then remove the pan from the flame and transfer the halwa into a serving bowl. Allow it to cool down and serve. ? Rasgulla ? INGREDIENTS FOR CHENNA / PANEER: 1 litre milk, full cream cows milk 2 tbsp lemon juice FOR SUGAR SYRUP: 1½ cup sugar 8 cups water 1 tsp Rose water Method– CHENNA / PANEER RECIPE: In a thick bottomed pan add 1 litre milk. Stir occasionally and get to a boil. Add lemon juice and stir well. If it doesn't curdle add more lemon juice and stir till milk curdles completely, Switch off the gas stove. Rest for 2 minutes. Drain the curdled milk into the thin cloth or muslin cloth. Rinse the chenna under running water to remove the acidic flavour. Now bring it together and squeeze off excess water. Hang for 30 minutes. or till all the water drains off completely. After 30 minutes, start to knead the paneer. knead paneer till it turns out smooth without any grains of milk. Make small balls of paneer and keep aside. SUGAR SYRUP RECIPE: In a deep vessel take 1½ cup of sugar. furthermore, add 8 glasses of water and stir well. Boil the syrup for 10 minutes on medium flame. Add Rose water to the sugar syrup. after that, drop the prepared paneer balls into boiling sugar syrup. cover and boil for 15 minutes. the paneer balls will have doubled in size. keep aside till it cools completely and then refrigerate. ? Sewai ? Ingredients Lachha/feni/sewai–4 or 1/kg (sewa crushed by hand) Ghee 1cup Sugar–250 gms or according to taste Milk–1/2 litre Milk powder–4 tbsp(optional) u can also use khoya aur mawa Desiccated coconut_4 tbsp( u can also use chopped dried coconut) Green cardamom–4 Cloves–4 Some Chopped dry fruits Method– In a wide vessel, heat ghee, add cardamom and cloves, add the sewai and fry on low flame untill brown. Add sugar and saute some minutes. Then add the milk and mix well. Now u can add milk powder and desiccated coconut at this point and mix gently. Now cover the sewai and cook it on low flame few more minutes or until the milk dries out. You can stir gently occasionally, so that the bottom must not get burnt. Garnish with chopped dry fruits.
