Is duniya ki sab pyaari behno ko Raksha Bandhan ki dheron shubh kamnayein 👫 🍈 Guava Flavour Sandesh 🍈 Ingredients_ 250 gm_ Paneer/cottage cheese 4 tbsp_ Rice flour 8 tbsp condensed milk 1 tsp Vanilla essence 25 piece_ Alpenliebe juzt jelly guava flavour(make paste) 2 tbsp_ finely chopped White chocolate 8_10 drops_ green colour 8_10 drops_ pink colour 2_3 drops_ brown colour Method_ Put Paneer and rice flour in mixer grinder and make a paste. Put Alpenliebe juzt jelly guava flavour in mixer grinder and make a paste Transfer the prepared paneer dough into the kadhai. Cook on low flame by spreading and mashing well. After one minutes add juzt jelly paste and mix well. Now add condensed milk and vanilla essence and mix well. Cook for 5 minutes or till the curdled milk is cooked well. over cooking, makes paneer crumbly loosing out all moisture. Transfer this mixture on a plate. Divide this mixture in 3 parts, two equal and one little smaller than these two. Now add green and pink colors to equal part doughs and mix well to get desired color. In the third one add brown colour. Now add chopped white chocolate in pink dough, and again mix well, or u roll the pink dough in chopped White chocolate. Your doughs are ready to prepare your sweets. First of all take pink dough portion and roll it to round ball, then take green dough and flatten it with your fingers to make small round poori shape. Now place pink round ball on green one and cover it completely by rolling in between Palm, so that pink ball is completely covered by green dough. Finally you will get a slightly big green ball in your hand. In the same manner make all the guava balls and keep in a plate. Now take brown dough and make tiny round shape to make guavas upper part from which stem is connected. Stick these tiny brown round shape on upper part of the guava sweet. Now keep these in refrigerator for 1 1/2 - 2 hrs then with help of a sharp knife , cut some balls in quarter for garnishing. It's the only planet that has mangoes...🥭🥭🥭 22 July is #nationalmangoday a whole dedicated to one thing – eating mangoes! 5000 years ago, mangoes were first cultivated in India before they spread to Southeast Asia. In the 10th century AD, cultivation of this deliciously sweet and juicy fruit began in East Africa. It is said that the paisley pattern developed in India is based on the shape of the mango. The mango is also the national fruit of India, Pakistan and the Phillipines. In Bangladesh, the mango tree is the national tree. Since 1987, an international mango festival is held in New Dehli, India. It includes more than 50 mango growers from across the country. During this festival, there are competitions and quizzes on the many aspects of mangoes, including different uses in cuisine, as well as the many different varieties (more than 550). Mangoes are cultivated in most frost-free tropical climates, with almost half of the world’s mango supply harvested in India. The second largest source is China. Some fun facts about mangoes, include: • 20 million tons of mangoes are grown annually. • They are related to cashews and pistachios. • They provide 100 per cent of your daily vitamin C • A basket of mangoes is a gesture of friendship in India. • Mango trees can grow as tall as 30 metres! • Most of the mangoes sold in the US come from Mexico, Peru, Ecuador, Brazil, Guatemala, and Haiti. • There are also mango festivals in other places, including Canada, Jamaica, the Philippines, and the USA. 🥭🥭🥭🥭🥭🥭🥭🥭🥭🥭🥭🥭🥭 Ingredients– For the base :digestive biscuits, marigold or any plain cookies crushed 150 gms butter melted 1/2 cups For the filling : whipping cream 3/4 cups cream cheese 300 gms mango pulp 1/2 cups fresh lemon juice 2 tbsp Gelatin or Agar Agar 5 tbsp water 120 ml For the topping : mango pulp • some mango slices 3-4 tbsp Method– Crush The Biscuits Using A Food Processor Or By Placing Them Into A Ziplock Bag And Smashing Them With A Rolling Pin. Stir The Crumbs With D Melted Butter N Press On The Bottom Of An 8-Inch(20cm) Springform Tin. Set The Base Aside. In A Bowl, Whip The Heavy Cream Until The Result Is Soft Peaks. Beat In The Cream Cheese. Then Add In The Mango Pulp And Fresh Lemon Juice Until Everything Is Smooth. In A Microwave Safe Bowl, Stir Together The Gelatin And Water. Let The Mixture Stand For About 5 Minutes To Bloom And Thicken, Then Dissolve In The Microwave Over 15 Second Increments Or Over A Stovetop Over Low Heat, Stirring Constantly. Gradually Drip In 6 Tablespoons Of The Cheesecake Batter Stirring Continuously. Work Quickly As The Gelatin Will Begin To Set As Soon As It Has Been Melted. Add The Tempered Gelatin To The Rest Of The Cheesecake Batter Stirring Immediately After It Has Been Added. Pour The Filling Into The Springform Pan And Dollop With The Mango Pulp. Using A Toothpick. Swirl The Pulp Into The Cheesecake- But Beware, Over- Swirling Is Actually Over- Mixing And You'll End Up With A Messy Surface Devoid Of A Swirl Pattern. Chill The Cheesecake For A Minimum Of 6 Hours Or Overnight, Until Set. Today is junk food day...and my healthy version of junk food 👉 🍔 Raw Banana Burger 🍔 Ingredients– For patties_ 6 Bananas (Raw / Kachhe Kele) 2 tbsp Sattu/ roasted gram flour powder 1 tsp Garam masala powder 1/2 tsp chat masala 1 Onion finely chopped 1 Green Chilli, finely chopped 1/4 cup coriander finely chopped 1 tsp lemon juice Black Salt/salt to taste Another ingredients: 1 cup bread crumbs 3 tbsp oil Cheese slice Butter as required Special Sauce: 1 tsp Mayonnaise 1 tsp tomato ketchup 1/2 tsp red chili sauce 1/4 tsp black pepper powder 1/4 tsp lemon juice Assembling Burger buns Mayonnaise lettuce Tomato slices Onion rings Raw banana Patty Special sauce Method– To begin with, pressure-cook the bananas with their peel on. Cook them for about 2 whistles or 10 mins. Do not rush through this process as we want the bananas to be soft and tender to make a smooth mash. Remove from water and allow them to cool. When comfortable to touch, peel the banana. Transfer it to a big bowl. Mash banana with a fork or potato masher. Now add Sattu, garam masala powder, chopped onion, green chillies, coriander and salt (rock salt). Mix well. The patties mixture is ready and now convert it into a patty shape by applying water on your hand. Roll the patties into the breadcrumbs. Heat sone oil and place the patties in it Let the patties cook from both the sides and keep them on obsorbent paper. For special sauce mix mayonnaise, tomato ketchup, red chili sauce, black pepper powder and lemon juice. Mix well and keep aside. Slice the bun and toast it_ put some butter over the pan and place the buns. Now its time to assemble the burger. On top of bun add mayonnaise, tomato and onion slices, place the raw banana patty and put some special sauce. Now top it up with cheese slice, lettuce and place the cover of bun of the top. 🥭 Mango Chia Pudding 🥭 Mango Chia Pudding is a healthy and delicious layered dish that is loaded with antioxidants, Omega 3, Vitamin A and C. It’s definitely a guilt-free indulgence. Ingredients– 1/2 cup chia seeds 2 cups (500 ml) unsweetened almond milk to taste Honey 4-6 ripe mangoes (puree form) 1/2 tsp vanilla essence Method– In a medium bowl, stir 1/2 cup chia seeds, 2 cup Almond milk, honey and vanila essence, let it sit for 10 minutes. Go back to your mixture and break apart any clumps that may have formed with a fork. Stir again. Transfer to an air tight container and chill overnight. When you are ready to serve, layer with mango puree in a serving glass. Garnish with your favourite toppings like coconut and nuts or as u wish. ❤️ Lal Mans ❤️ Ingredients– Mutton 1 kg (with bones) Onions 4 finely chopped Dried Red Chile 10 (deseed ) Coriander powder_3 Tbsp Cumin powder_ 2 Tbsp Garlic garlic paste 2 tbsp Curds 1/2 Cup Ghee 1 cup Salt to taste Cardamom 4 pods Black pepper 1/2 tsp Bay leaf–2 Mace 3-4 strands Black Cardamom 2 pods Cinnamon sticks 1" Fresh Coriander - chopped for garnish Dried Red Chile 2-3 whole for garnish Method– Grind the soaked chillies to a fine paste in a blender. In a large mixing bowl, combine the mutton, yogurt, cumin powder, coriander powder, turmeric powder, one tablespoon ginger garlic paste, salt and the red chilli paste. Mix well and set aside to marinate in the refrigerator for an hour. Heat ghee in a pressure cooker, to that add black cardamom, green cardamoms, cinnamon, cloves and bay leaf and sauté till its fragrant. Add the onions and sauté till they turn light brown in colour. Then add the remaining ginger garlic paste and sauté for a minute. Add the marinated mutton to the onions and sauté on high heat for two to three minutes. Add salt and sufficient water to cover all the mutton pieces. Cover with a lid and let it cook under pressure for seven to eight whistles. Once done, remove from heat and wait till the pressure is released. Put the curry back on heat, add garam masala and give a quick stir before removing from heat. Lastly add sufficient water (like Mutton covered not fully covered with water) and cook in slow flame until get a nice gravy. Finally add chopped coriander leaves, mix well. Serve hot with steamed rice, Pulao, roti or paratha. Notes I have used 10 Kashmiri chillies and 5 dry chillies that are hot. This will provide a good blend of colour and heat. You can tweak this if you want your curry fiery! Please note that yogurt added at the last step will reduce some of the chilli heat. If you can get hold of Mathania chillies use them instead for a more authentic flavour. 🍈 Kathal/Jackfruit Biryani 🍈 An unusual biryani that not many might have heard of, Kathal Biryani is made using raw jackfruit pieces cooked slowly with a variety of spices and mixed with basmati rice. Ingredients– For rice : long grain basmati rice 2 cups salt 2 tsp water 4 cups tejpatta 2 tsp green cardamom 2-3 nos 2 inch cinnamon stick cloves 3-4 nos For masala : vegetable oil 3 tbsp ghee 3 tbsp raw jackfruit/ kathal 500 gms Shahi Zeera 1 tsp onions thinly sliced 1 1/2 tsp ginger garlic paste 2 tsp green chillies 3-4 nos yogurt 1 cup red chilli powder 1 tsp garam masala powder 1/2 tsp biryani masala powder 1 tbsp fresh mint chopped 2 tbsp fresh coriander leaves 2 tbsp Some hole garam masala like–black pepper, green n black cardamom, cinnamon stick, cloves n star anise Salt to taste For garnishing : golden fried onions 1/2 cups fresh mint leaves 2 tbsp cashew nuts fried until golden 10-12 nos(optional) 10-15 nos saffron strands soaked in 1tbsp milk Method– For rice :Wash the rice and soak in enough water for 30 minutes. Drain the water n add d rice in heavy bottom pan along with four cups of water, salt, tej patta, green cardamom n cloves. cook the rice until it is 80% done. For masala : Heat oil in a pan. once the oil is hot, add jackfruit and fry until golden brown. Remove from the pan and keep aside. In the same pan, add ghee. once the ghee is hot, add some hole garam masala n Shahi zeera and onion and fry onion until golden brown. Add ginger garlic paste, red chilli powder n garam masala powder n salt and fry for a minute. Add yogurt, green chillies, biryani masala n fried jackfruit n fry for 3-4 minutes. Add mint coriander leaves and cover the jackfruit until it is done. Add little water if required. Assembling the Biryani : In a heavy bottom pan add the jackfruit masala. Sprinkle some golden fried onions, mint n coriander leaves n cashew nuts. Cover with cooked rice. Top with the remaining fried onions, mint n coriander leaves, cashew nuts and saffron soaked in milk. Cover the pan tightly n cook on very low heat for 10_15 minutes. Remove the pan from heat and let it rest for another 10 minutes. Fluffy with a fork n serve hot with raita.
