❤️ Beetroot Vermicelli ❤️ Vermicelli upma recipes are very common in many south indian households and are mainly prepared as breakfast recipes. typically it is prepared with semolina, but these days the recipe is easily extended to other ingredients like vermicelli, oats, broken wheat and also millets. out of these bambino or mtr vermicelli upma recipe is a popular recipe. Today i made Beetroot vermicelli upma with some more vegetables. It becomes more healthy, tasty and beautiful. Ingredients– to cook vermicelli: 2 tsp oil 1 cup vermicelli / semiya water to cook ½ tsp salt other ingredients: 3 tsp oil 1 tsp mustard seeds ½ tsp urad dal 1 dried red chilli few curry leaves 2 green chilli slit 2 tbsp Sweet corn 2 tbsp peas  2 tbsp carrot finely chopped 2 tbsp capsicum finely chopped 2 tbsp onion finely chopped 2 tbsp coriander finely chopped 1 cup grated Beetroot 1/2 lemon 1/2 tsp salt Method – Firstly, in a kadai heat oil and splutter mustard seeds urad dal, dried red chilli and few curry leaves. Now add  green chilli. saute well. Further, add onion and saute slightly. Also add Sweet corn, peas, carrot and capsicum. Saute for a minute. Add salt. saute for a minute.  Cover and cook for 2 minutes or till vegetables turn soft. Add in cooked semiya and mix gently. do not over mix as semiya will get mashed. Now add grated Beetroot and mix gently. Now add coriander leaves and lemon juice, mix well. ❤️ Eggless Tuti Fruti Cake ❤️ It is a popular variety of cake in India. This tutti frutti cake recipe is made without eggs and has a soft, light and moist crumb. The recipe is also easy and even newbies in baking can make this tutti frutti cake easily. Ingredients– 1 1/4 cup All Purpose Flour (Maida) 1/2 cup warm milk or as required 3/4 cup curd 1/2 cup Tuti fruti 1/4 cup powdered Sugar 1/2 tsp Baking soda 1 tsp Baking powder 1/2 cup Cooking oil 1 tsp Vanilla Essence 1 tsp vinegar Method– Take tutti frutti (reserve 1 teaspoon of tuttifrutti for later use) in a small bowl, sprinkle 1 tablespoon of flour, mix well and set aside In a large mixing bowl take curd, sugar, oil and vanilla extract. Mix well with the help of whisk. Further sieve maida, baking soda and baking powder. Mix well using cut and fold method. Add warm milk and mix well forming thick flowing consistency batter. Add in tutti fruti and give a good mix. Transfer the cake batter into the grease cake mould. Level up the batter and pat the tray twice to remove the air incorporated into the batter. Place the cake tray into preheated oven. bake the cake at 180 degree celsius or 356 degree fahrenheit for 30-40 minutes. Once ready remove the cake from oven and allow it to cool down. ? Bathua Paratha ? Ingredients: Atta (Weat flour) - 2 Cup Bathua–1 cup finely chopped Onion–1 finely chopped Coriander leaves_ finely chopped Green chillies_2 finely chopped Ajwain (Carom seeds) - 1 tsp Red chili powder - 1/2 tsp Kasuri methi (dried fenugreek leaves)–1 tsp Oil–1 tbsp Salt to taste Water for kneading Oil for cooking Flour for dusting Directions: In a bowl, mix all above ingredients except for water n oil for cooking. Mix till all ingredients come together. vegetables water released due to the salt will be enough to slightly wet the ingredients and bring them together. Now adding little water a time, start kneading the mixture, Knead well for 2-3 mins. Cover and keep aside for 5 mins. Heat a pan, make small sections/ rounds of the dough. Place a small section on flat surface and roll out into a think round paratha. Use plain flour for dusting. When evenly rolled out, drizzle a little oil on the tawa/pan and place the paratha on top. Cook the paratha on both sides for 1 min each or till golden brown and cooked. Remove from heat and continue the same process with the remaining sections. Serve this hot paratha with any aachar n curd. ? Chatpata Tikka Bites ? This is a spicy, flavourful and crispy snack that will go perfectly with your evening tea. A crispy snack that melt in the mouth are these pan fried chatpata tikka bites made with rava, potato, and some spices. They are easy and quick to make and serve as a nice party snack or a finger food. INGREDIENTS Water – 3 cups Semolina – 2 cups Finely chopped onion – 1 Boiled and grated potatoes -2 cup Salt as per taste Red chilli flakes – 2 tsp Finely chopped coriander Rice flour – 2 tbsp Pav bhaji masala – 2 tsp Method– To make sooji tikka bites ake a pan add water and boil water. Add sooji into water, after a boil, mix well without lumps. Add Finely chopped onion, Boiled and grated potatoes and mix well. Add Salt as per taste, Red chilli flakes, finely chopped coriander and mix well. Turn off flame & let it cool little. Add rice flour, Pav bhaji masala and mix well. Take a tray. Add oil & grease tray with oil. Transfer tikka mix and spread. Set in fridge for 1 hour or cover with silver foil or clig wrap and set for 30 mins. After 1 hour remove from fridge cut into pieces. In a pan add 2 tbsp oil and let it heat. Shallow fry tikka’s. Flip and fry until golden crisp. ? Lauki Ki Barfi ? Lauki (Bottle Gourd) 1 Kg Condensed milk–8 tbsp or per your taste Desiccated Coconut–1/2 Cup Green Cardamom Powder 1 Tsp Almonds, Finely Sliced 8_9 Cashew Nut, Finely Sliced 8–9 Raisins–1 tbsp Ghee Or Oil 3 Tbsp + To Greasing Green Food Colour (Optional)–Few drops Method– Take a Lauki (bottle gourd) and peel it to clean. Wash, cut and roughly chop the bottle guard into pieces and grind it well. Cut the lauki into 4 pieces lengthwise. Discard the inner soft part of the lauki as it contains seeds. The unseeded outer clean portion will be used to make barfi. Grate the lauki. Squeeze the grated Lauki using both of your hand to remove water from the Lauki. You will get dry grated Lauki. If you do not remove water from the Lauki, it will take longer time to cook. Now add about 3-4 spoons of ghee in a pan and roast the squeezed lauki well To this, add condensed milk and let it boil well till all the liquid is absorbed. Add dedicated coconut, cardamom powder and mix well. Add green food color (which is optional) and mix well. Add finely chopped almonds, cashews and Raisins to it and mix well. Cook it for about 2 minutes while stirring continuously. Add 1 tablespoon of ghee and cook on medium heat till the dough is dry enough. Barfi dough will start leave the pan by adding ghee at this stage. Turn off the gas when the dough dries. Take a tray in which we must move the barfi to set. Grease the tray well with ghee and transfer the dough to this tray, spread and set it with a spatula. Spread some dry fruits over it and press them gently with a spatula. Keep the tray in a cool place for 1 hour. You can also keep the tray in the fridge. After an hour the barfi will freeze and become tight.
