? Crispy Shell Pasta ? Ingredients– 400 gms pasta 1/2 cup corn flour 1/2 cup all purpose flour Oil for deep frying 1 ½ tsp roasted red chili powder 1 tsp roasted cumin powder 1 tsp black pepper powder 1 tsp chaat masala 1 tsp amchur powder 1 tsp/or to taste black salt Method– Cook pasta according to packet instructions. (Cook pasta till 80 to 90% done) Add corn flour and all purpose flour in cooked pasta. Mix well. Transfer it in a sieve, remove the excess flour. Heat oil on medium high heat in deep frying pan. Line a tray with kitchen paper for draining fried pasta chips. Once oil turns hot, add cooked pasta one by one into oil for deep frying. Fry the cooked pasta in the oil until light golden brown and crispy, about 1-2 minutes. Remove to the paper towel-lined tray to drain and season with roasted chili powder, pepper powder, roasted cumin powder, chaat masala, amchur powder and black salt while it’s still hot. Allow them to cool completely and store in an air tight container. Happy Ganesh Chaturthi ? Rose Flavour Modak ? Ingredients_ 200 grms Paneer/cottage cheese 4 tbsp Rice flour 1 cup powdered sugar 1 cup desiccated coconut 4_5 tbsp Rose syrup 6_8 drops Rose essence 2_3 tbsp chopped dry fruits (Almond, Cashew, pistachio and raisins) Method_ Crumble the paneer or grate the paneer with a fine grater. mash it very well. Add rice flour and mix well. Transfer the prepared paneer dough into the kadhai. Cook on low flame by spreading and mashing well. After one minutes add powdered sugar and mix well. After 2 minutes add desiccated coconut. Mix it well and continue cooking with stirring constantly. Keep mixing and mashing the larger granules of paneer with a spatula. Cook till it comes together like a dough and leaves the sides of the pan. It took me 5 minutes. Now add Rose syrup and Rose essence and mix well. cook for 1_2 minutes. Now transfer this mixture on a plate. To prepare a modak, grease the inner side of the mould with ghee. Take a small ball of the dough mixture and put in the mould. With the help of your fingers, press the dough onto the walls of the mould. The entire inner side of the wall should be coated with the dough. Use extra dough if required, but do not make the layer on the wall very thick. Now, take some chopped dry fruits and gently put in the mould. Press the stuffing in the mould. Leave some space at the base of the mould to add a layer of dough. Take some dough and gently press it at the base of the modak mould. Now, gently open one side of the mould, then the other side, and remove the prepared modak from the mould. Prepare modaks in the same way until all the dough and stuffing gets over. After making all the Modaks, put this Modaks in refrigerator for half an hour to set properly. ?? Tawa Pulao ?? Ingredients– Cooked basmati rice – 3 cup Onion finely chopped–1 Tomato finely chopped–3 big Ginger garlic paste – 1 tbsp Chopped carrot – 1/2 cup Chopped capsicum – 1/2cup Green peas – 1/2 cup Cumin seeds – 1/2 tsp Red chilli powder – 1 tsp Pav bhaji masala powder – 2 tbsp Salt – to taste Butter– 3 tbsp Method– Heat butter in a tawa/kadhai add cumin seeds after it crackles add chopped onions. Saute well add ginger garlic paste. Saute until the raw flavor goes. Now add chopped veggies, chilly powder, pav bhaji masala powder and salt. Mix well and let them cook for few minutes. Now add tomatoes and give it a good stir. Add 1/2 cup water and allow the veggies n tomato to cook. When the veggies have cooked and looks dry add the cooked basmati rice and mix gently. When done put off the flame and garnish it with chopped cilantro. Ingredients_ 250 gm_ Paneer/cottage cheese 4 tbsp_ Rice flour 8 tbsp condensed milk 1 tsp Vanilla essence 25 piece_ Alpenliebe juzt jelly guava flavour(make paste) 2 tbsp_ finely chopped White chocolate 8_10 drops_ green colour 8_10 drops_ pink colour 2_3 drops_ brown colour Method_ Put Paneer and rice flour in mixer grinder and make a paste. Put Alpenliebe juzt jelly guava flavour in mixer grinder and make a paste Transfer the prepared paneer dough into the kadhai. Cook on low flame by spreading and mashing well. After one minutes add juzt jelly paste and mix well. Now add condensed milk and vanilla essence and mix well. Cook for 5 minutes or till the curdled milk is cooked well. over cooking, makes paneer crumbly loosing out all moisture. Transfer this mixture on a plate. Divide this mixture in 3 parts, two equal and one little smaller than these two. Now add green and pink colors to equal part doughs and mix well to get desired color. In the third one add brown colour. Now add chopped white chocolate in pink dough, and again mix well, or u roll the pink dough in chopped White chocolate. Your doughs are ready to prepare your sweets. First of all take pink dough portion and roll it to round ball, then take green dough and flatten it with your fingers to make small round poori shape. Now place pink round ball on green one and cover it completely by rolling in between Palm, so that pink ball is completely covered by green dough. Finally you will get a slightly big green ball in your hand. In the same manner make all the guava balls and keep in a plate. Now take brown dough and make tiny round shape to make guavas upper part from which stem is connected. Stick these tiny brown round shape on upper part of the guava sweet. Now keep these in refrigerator for 1 1/2 - 2 hrs then with help of a sharp knife , cut some balls in quarter for garnishing. In the 10th century AD, cultivation of this deliciously sweet and juicy fruit began in East Africa. It is said that the paisley pattern developed in India is based on the shape of the mango. The mango is also the national fruit of India, Pakistan and the Phillipines. In Bangladesh, the mango tree is the national tree. Since 1987, an international mango festival is held in New Dehli, India. It includes more than 50 mango growers from across the country. During this festival, there are competitions and quizzes on the many aspects of mangoes, including different uses in cuisine, as well as the many different varieties (more than 550). Mangoes are cultivated in most frost-free tropical climates, with almost half of the world’s mango supply harvested in India. The second largest source is China. Ingredients– For the base :digestive biscuits, marigold or any plain cookies crushed 150 gms butter melted 1/2 cups For the filling : whipping cream 3/4 cups cream cheese 300 gms mango pulp 1/2 cups fresh lemon juice 2 tbsp Gelatin or Agar Agar 5 tbsp water 120 ml For the topping : mango pulp • some mango slices 3-4 tbsp Method– Crush The Biscuits Using A Food Processor Or By Placing Them Into A Ziplock Bag And Smashing Them With A Rolling Pin. Stir The Crumbs With D Melted Butter N Press On The Bottom Of An 8-Inch(20cm) Springform Tin. Set The Base Aside. In A Bowl, Whip The Heavy Cream Until The Result Is Soft Peaks. Beat In The Cream Cheese. Then Add In The Mango Pulp And Fresh Lemon Juice Until Everything Is Smooth. In A Microwave Safe Bowl, Stir Together The Gelatin And Water. Let The Mixture Stand For About 5 Minutes To Bloom And Thicken, Then Dissolve In The Microwave Over 15 Second Increments Or Over A Stovetop Over Low Heat, Stirring Constantly. Gradually Drip In 6 Tablespoons Of The Cheesecake Batter Stirring Continuously. Work Quickly As The Gelatin Will Begin To Set As Soon As It Has Been Melted. Add The Tempered Gelatin To The Rest Of The Cheesecake Batter Stirring Immediately After It Has Been Added. Pour The Filling Into The Springform Pan And Dollop With The Mango Pulp. Using A Toothpick. Swirl The Pulp Into The Cheesecake- But Beware, Over- Swirling Is Actually Over- Mixing And You'll End Up With A Messy Surface Devoid Of A Swirl Pattern. Chill The Cheesecake For A Minimum Of 6 Hours Or Overnight, Until Set. Today is junk food day...and my healthy version of junk food ? ? Raw Banana Burger ? Ingredients– For patties_ 6 Bananas (Raw / Kachhe Kele) 2 tbsp Sattu/ roasted gram flour powder 1 tsp Garam masala powder 1/2 tsp chat masala 1 Onion finely chopped 1 Green Chilli, finely chopped 1/4 cup coriander finely chopped 1 tsp lemon juice Black Salt/salt to taste Another ingredients: 1 cup bread crumbs 3 tbsp oil Cheese slice Butter as required Special Sauce: 1 tsp Mayonnaise 1 tsp tomato ketchup 1/2 tsp red chili sauce 1/4 tsp black pepper powder 1/4 tsp lemon juice Assembling Burger buns Mayonnaise lettuce Tomato slices Onion rings Raw banana Patty Special sauce Method– To begin with, pressure-cook the bananas with their peel on. Cook them for about 2 whistles or 10 mins. Do not rush through this process as we want the bananas to be soft and tender to make a smooth mash. Remove from water and allow them to cool. When comfortable to touch, peel the banana. Transfer it to a big bowl. Mash banana with a fork or potato masher. Now add Sattu, garam masala powder, chopped onion, green chillies, coriander and salt (rock salt). Mix well. The patties mixture is ready and now convert it into a patty shape by applying water on your hand. Roll the patties into the breadcrumbs. Heat sone oil and place the patties in it Let the patties cook from both the sides and keep them on obsorbent paper. For special sauce mix mayonnaise, tomato ketchup, red chili sauce, black pepper powder and lemon juice. Mix well and keep aside. Slice the bun and toast it_ put some butter over the pan and place the buns. Now its time to assemble the burger. On top of bun add mayonnaise, tomato and onion slices, place the raw banana patty and put some special sauce. Now top it up with cheese slice, lettuce and place the cover of bun of the top.
