πŸ₯Ÿ Chicken Sha Phaley πŸ₯Ÿ This wonderful dish of Tibetan origin is literally heaven on your taste buds. Everyone loves bread, everyone loves meat, everyone loves the deep fried stuff, and Sha Phaley has all three. Bread stuffed with ground beef and cabbage made into semi circle or circle and then deep fried is everything that you need to know about this dish. Crispy on the outside and heavenly on the inside, this is what you get when you take the first bite into the golden semi circle. With different people having different demands a lot of variations have been done to the traditional dish, and people have readily accepted the addition of chicken, cheese and tofu to the stuffing. If you are a vegan even then, you can enjoy this delicacy with the tofu fillings. The Roll House in Gangtok is the best place to try one of these. Ingredients_ 250 grms minced chicken 1 tbsp ginger garlic paste or (finely chopped ginger garlic 1_1 tbsp) 2 onion finely chopped 2 tbsp chopped spring onions 2 tbsp coriander leaves finely chopped 2_3 green chillies finely chopped 1 tsp black pepper powder 1 tbsp soy sauce salt to taste For dough_ 4 cup all purpose flour water for kneading Salt to taste Method_ Prepare the Filling_ Heat oil in a pan, add onion and sautΓ© till it turns translucent. Add ginger-garlic paste, and stir it well till the raw smell goes away. Add minced chicken, saute it well (it will turn like scrambled egg) and allow it to cook (if needed sprinkle some water). Once it is almost cooked, add black pepper powder, salt, soy sauce and saute few minutes. Now add Coriander leaves, chopped green chillies, chopped spring onions and mix well. Dough Preparation_ Start two hours before cooking Mix flour and water, forming a ball Knead at least 5 minutes until dough is smooth and flexible Place dough in a dish with a lid, or cover with plastic wrap. Let rest for 2 or more hours so that the dough will be softer when shaping the shapale. Roll out Dough_ Take the dough, and knead it again. Cut it into small pieces and make them into small balls. Dust the small dough balls in all-purpose flour. Roll all dough balls in circle shape (diameter of the circles is approximately 3.5 inches, or 8 centimeters.) Set the circles of dough aside. Fill and Shape the Shapale Place a heaping 3 tablespoon filling on one circle of dough, then place a second circle of dough on top of the first one. Pinch the edges flat together very firmly β€” going all around the circle. This is important as you don’t want the filling to come out. Then, start anywhere on the circle, fold over a small piece of the edge, and pinch it down, repeating this all around the circle. This results in a crimped, pretty edge. Keep the shapale you have finished on a lightly oiled flat dish or surface, to avoid the dough sticking on to the surface. If the shapale are going to be sitting for a long time, you can place a damp cloth over them to keep them from drying out. Heat sufficient oil in a pan and deep fry phaley on medium heat. Cook until golden brown on both sides, turning frequently. Stir The Crumbs With D Melted Butter N Press On The Bottom Of An 8-Inch(20cm) Springform Tin. Set The Base Aside. In A Bowl, Whip The Heavy Cream Until The Result Is Soft Peaks. Beat In The Cream Cheese. Then Add In The Mango Pulp And Fresh Lemon Juice Until Everything Is Smooth. In A Microwave Safe Bowl, Stir Together The Gelatin And Water. Let The Mixture Stand For About 5 Minutes To Bloom And Thicken, Then Dissolve In The Microwave Over 15 Second Increments Or Over A Stovetop Over Low Heat, Stirring Constantly. Gradually Drip In 6 Tablespoons Of The Cheesecake Batter Stirring Continuously. Work Quickly As The Gelatin Will Begin To Set As Soon As It Has Been Melted. Add The Tempered Gelatin To The Rest Of The Cheesecake Batter Stirring Immediately After It Has Been Added. Pour The Filling Into The Springform Pan And Dollop With The Mango Pulp. Using A Toothpick. 🍈 Kathal/Jackfruit Biryani 🍈 An unusual biryani that not many might have heard of,Β Kathal BiryaniΒ is made using raw jackfruit pieces cooked slowly with a variety of spices and mixed with basmati rice. Ingredients– For rice : long grain basmati rice 2 cups salt 2 tsp water 4 cups tejpatta 2 tsp green cardamom 2-3 nos 2 inch cinnamon stick cloves 3-4 nos For masala : vegetable oil 3 tbsp ghee 3 tbsp raw jackfruit/ kathal 500 gms Shahi Zeera 1 tsp onions thinly sliced 1 1/2 tsp ginger garlic paste 2 tsp green chillies 3-4 nos yogurt 1 cup red chilli powder 1 tsp garam masala powder 1/2 tsp biryani masala powder 1 tbsp fresh mint chopped 2 tbsp fresh coriander leaves 2 tbsp Some hole garam masala like–black pepper, green n black cardamom, cinnamon stick, cloves n star anise Salt to taste For garnishing : golden fried onions 1/2 cups fresh mint leaves 2 tbsp cashew nuts fried until golden 10-12 nos(optional) 10-15 nos saffron strands soaked in 1tbsp milk Method– For rice :Wash the rice and soak in enough water for 30 minutes. Drain the water n add d rice in heavy bottom pan along with four cups of water, salt, tej patta, green cardamom n cloves. cook the rice until it is 80% done. For masala : Heat oil in a pan. once the oil is hot, add jackfruit and fry until golden brown. Remove from the pan and keep aside. In the same pan, add ghee. once the ghee is hot, add some hole garam masala n Shahi zeera and onion and fry onion until golden brown. Add ginger garlic paste, red chilli powder n garam masala powder n salt and fry for a minute. Add yogurt, green chillies, biryani masala n fried jackfruit n fry for 3-4 minutes. Add mint coriander leaves and cover the jackfruit until it is done. Add little water if required. Assembling the Biryani : In a heavy bottom pan add the jackfruit masala. Sprinkle some golden fried onions, mint n coriander leaves n cashew nuts. Cover with cooked rice. Top with the remaining fried onions, mint n coriander leaves, cashew nuts and saffron soaked in milk. Cover the pan tightly n cook on very low heat for 10_15 minutes. Remove the pan from heat and let it rest for another 10 minutes. Fluffy with a fork n serve hot with raita. πŸ— KFC style crispy chicken πŸ— INGREDIENTS 250 grams Chicken (Boneless) for the marinade: 1 tbsp Ginger Garlic paste 1 tsp red chilli powder/paprika 1/2 tsp black pepper powder 1 tsp lemon juice Salt to taste for the coating: 3/4 cup Cornflour 1/2 cup cornflour slurry to taste Salt (and Pepper) (Oil for Frying) Method– Cut the boneless chicken into 1 inch bite sized pieces. Mix together all the ingredients under marinade and rub all over the chicken. Marinate for at least half an hour. Season the Cornflour and cornflour slurry with salt and pepper. To start making crispy chicken, arrange an assembly line of sorts. Place Cornflour, Cornflour slurry next to each other along with the chicken. Arrange a plate to place the chicken once coated. Now start by lightly coating the chicken with Cornflour. Dip it in cornflour slurry next, and then again coat with cornflour. Repeat for each piece of chicken, and keep placing them on the plate. Heat oil for frying and deep fry in batches on medium heat till the chicken is cooked through and lightly brown on the outside. Remove from oil. Heat oil on high flame and again fry the half fried chicken till golden brown. Your crispy chicken is ready to serve. Dip the lollipop into the batter and fry until crisp on the outside and fully cooked inside.Transfer it to a plate.Chicken lollipop ready to serve. 😍 Spicy Ghati Paneer Masala 😍 INGREDIENTS_ 250 gms Paneer cubes 2 onions finely chopped 2 tomato finely chopped 2 green chillies 2 tbsp capsicum cubes 1/2 tsp cumin seeds 2 cloves 1 piece of cinnamon 2 green cardamom 1 black cardamom 2 tbsp Ghati masala 2 tbsp_ ginger garlic paste 1/2 tsp kashmiri red chilly powder 1/2 tsp coriander powder 1/2 tsp red chilly powder 1/2 tsp kitchen king masala powder 1/2 tsp turmeric powder 1/2 tsp garam masala 1 tsp kasuri methi 2 tbsp finely chopped coriander leaves 3 tbsp cream Salt to taste Oil 4 tbsp Method_ Heat nonstick pan and add oil. Add whole garam masala. Fry all masale for 30 seconds. Now add finely chopped onions and saute until golden brown. Add ginger garlic paste n saute few minutes. Now add turmeric pwd, Kashmiri red chilli pwd, kitchen king masala pwd, coriander pwd, garam masala pwd. saute on low flame till masala cook well or oil separate from masala. Do not make it very dark. Now add chopped tomato and cook for 3_4 minutes. Cover and cook in low flame for 5 mins. Tomatoes will start to leave oil from the sides. Add Ghati masala and sauté well. Add salt and mix well. Now add capsicums cubes and green chillies, cover and cook few minutes. Now add 3 tbsp cream and mix well. Add little water at this stage. Mix well and adjust the gravy. Now add Paneer cubes. Add kasuri methi and mix well. Cover and cook few minutes.
