It is a typical dish made from batter prepared from rice, urad dal, Bengal daal, and a few other kinds of cereal as well. A true soul food for most of the south Indian people. What do you call it Sambar rice or Sambhar rice?? Let me know in the comments section. In south Indian cuisine we have most underrated dish known as Sambar/Sambhar. It's quite fascinating how people pronounce it. In the south, it is pronounced as Sambhar but as in the rest of India or the world, it is called sambar where meaning is the same but the feeling is quite different. Sambhar is a quiet versatile dish in south India not only we people eat it with idli, dosa or any south Indian breakfast item but also we have it with hot plain rice or Pulaos too. Sambhar is nothing but sweet and tangy savory flavored lentil stew which some vegetables like drumsticks, Yellow pumpkin, Carrot, shallots, Radish, Tomato, Potatoes, Snake gourd, Bottle gourd, etc are used in cooking. Apart from south Indian breakfast sambhar is best paired with hot rice topped with a dollop of ghee (clarified butter) papad and some people even prefer to use Indian pickle while eating. Sambhar rice is one of the soul food for south Indians that is the reason they even serve it as a special dish at weddings too. Now even cafes in Hyderabad started serving some lip-smacking sambhar rice. Here I have a delicious lip-smacking sambhar rice with some ghee and savory cornflakes on the top. Vegetable Rice Appe Ingredients– 2 cup rice 1/2 cup urad dal 1 onion finely chopped 2 tbsp capsicum finely chopped 2 tbsp grated carrot 2 tbsp green peas 2 tbsp sweet corn 2 tbsp coriander leaves finely chopped 1/2 tsp mustard seeds 1/4 tsp cumin seeds 2 green chilies chopped 5-6 curry leaves 1 tbsp oil Salt to taste Oil for cooking Method– Wash & soak rice, urad dal in water for 4-5 hours. Drain & grind to a smooth paste with enough water. Cover & set aside overnight to ferment. Next day, heat oil in a small pan, add mustard seeds, cumin seeds, green chilies and curry leaves. After mustard and cumin seeds crackle add this to the fermented batter. Add salt, little water if required , mix & form a thick batter. Now add all the chopped vegetables n mix well. Heat appe mould on a medium flame & grease it with a little oil. Pour a spoonful of batter in each appe mould. Cook till outer surface becomes golden brown & then turn each appe upside down using a fork & cook other side. Remove & repeat same with remaining batter. ❤️ Beetroot Upma ❤️ Ingredients White rava - 1 cup Beetroot juice - 1/2 cup [grate, grind to fine paste and extract the beetroot juice] Onion - 1 [finely chopped] 2 tbsp green peas 2 tbsp sweet corn 2 tbsp capsicum ( finely chopped) 2 tbsp carrot ( finely chopped) Green chilli - 1 Curry leaves - 1 spring Coriander leaves [chopped] - 2 tbsp Mustard seeds - 1 tbsp Bengal gram - 1 tbsp Urad dal - ½ tbsp Salt to taste Oil - 2 tbsp Method_ Dry roast rava Heat oil in a pan then add mustard seeds. Once it’s spluttered add chopped onion, carrot, peas, sweet corn n capsicum sauté till light brown colour then add green chilli and curry leaves and sauté gently. Add 1/2 cup of beetroot juice and salt. When boils add roasted rawa slowly and stir simultaneously so that there will be no lumps. Mix well and cook for 2 minutes cut off heat Add lemon juice. Then cover it for 5 minutes.
